The paper examined specialty coffee prepared with naturally dried, finely ground whole Lion’s Mane mushroom.
Sixty untrained tasters compared two mushroom-coffee formulations labelled 0.5% and 1.0%.
On the study’s five-point scale from −2 to +2, estimated mean ratings were +1.17 and +1.05.
The reported difference was not statistically significant (p = 0.539).
The consumer test did not include a reported plain-coffee control.

Formulation considerations
From research to product development
- Ingredient comparison: Compare the commercial extract with the ground mushroom used in the paper.
- Mixing and cup quality: Mix the insoluble 1:1 Lion’s Mane extract thoroughly with the ground coffee powder.
Assess dispersion, sediment, coffee aroma and mushroom taste in the intended serving.
- Packaging: Use airtight, opaque, moisture-proof packaging.
- Nutrient verification: Measure vitamin B6 retention after hot preparation and through shelf life.
Confirm nutrient specifications and claim eligibility for the finished product.
The MUSHEEZ® take
The mushroom can join the conversation without taking over the café.
We’d still like to taste the coffee.
Serve as a small coffee with a splash of milk.
