Instant Shiitake broth ingredient options

MUSHEEZ® FUNCTIONAL MUSHROOM INGREDIENT

SOLVIQA™ Shiitake 1:1 extract powder
or SOLVIQA™ Shiitake dispersible water extract powder ↗ (opens new tab)

Complementary BIOVIT™ ingredient

BIOVIT™ Viitake™ from Shiitake mushroom extract

Viitake™ provides vitamins D2 and B12.

Alternatives that could also work well are individual vitamins A, C, D2, D3, E, B6, B12 and K2; biotin and folate; zinc, selenium, iodine and chromium; and the Triple B blend.
Other combinations are possible, but have additional formulation or processing constraints.
Ingredients supplied separately.

Further ingredient options

Viitake™-only route: BIOVIT™ Viitake™ from Shiitake mushroom extract in the broth base, without a separate SOLVIQA™ extract.
B12-only route: BIOVIT™ Shiitake B12 powder.
Vitamin D2 from Viitake™ supports the vitamin D claims shown here.
B12 alone does not support vitamin D claims.

What the research tells us

Researchers recovered Shiitake blanching liquid and liquid released by centrifuging blanched, frozen and thawed mushrooms.
They concentrated the broths, added resistant dextrin and spray-dried them.
The study also investigated taste compounds in the broth drinks.
Ninety untrained tasters rated drinks prepared with boiling water and containing 1–3.5% broth solids on a nine-point scale.

The research reports the highest overall liking at 2.5% broth solids.
With one part broth solids to three parts dextrin, scores were 7.3/9 for blanched broth and 7.5/9 for centrifuged broth.
Higher concentrations reduced liking and could taste slightly bitter.

Formulation considerations

From research to product development

  • Ingredient comparison: Compare the selected SOLVIQA™ Shiitake powder with the concentrated, spray-dried broth solids and resistant-dextrin carrier used in the study.
    The carrier and process differ.
  • Dry blending: MUSHEEZ® recommends pre-blending Viitake™ with one dry ingredient, then adding it to the finished powder after spray drying.
Do not add it to the hot aqueous concentrate.
Add alternative nutrients to the finished dry mix after any drying step.
Pre-dilute very small doses of Triple B, B12, D2, D3, K2, biotin, selenium, chromium or iodine in one dry component.
    Mix thoroughly.
  • Preparation and sensory checks: MUSHEEZ® considers brief boiling-water reconstitution acceptable.
Assess flavour, dispersibility, sediment and consistency in the prepared cup at the intended serving dilution.
  • Packaging and nutrient verification: Use airtight, opaque, moisture-proof packaging and establish the dry mix’s shelf life.
Verify vitamin D2 and B12 retention after processing and hot-water preparation and through shelf life.
The HIGH IN VITAMINS D & B12 target requires qualifying levels of both vitamins in the prepared broth at the intended serving dilution.
Verify the corresponding qualifying nutrient level for any alternative route.

Other claims to consider
