Maitake gluten-free bread ingredient options

MUSHEEZ® FUNCTIONAL MUSHROOM INGREDIENT

SOLVIQA™ 1:1 Maitake extract powder

Complementary BIOVIT™ ingredient

BIOVIT™ Calcium from marine algae extract

Alternatives that could also work well are vitamins A, D2, D3, E, B6, B12 and K2; biotin and folate; iron, zinc, selenium, iodine, magnesium and chromium; and the Viitake™ and Triple B blends.
Other combinations are possible, but have additional formulation or processing constraints.

What the research tells us

Researchers ground dried Maitake and sieved it to 0.2 mm.
It replaced rice flour at 5%, 10%, 15% and 20% of the flour blend in gluten-free rice, corn and potato-starch bread.
Dough was mixed for 5 minutes, proved for 40 minutes and baked at 230°C for 40 minutes.
Twenty adult bread consumers rated coded samples on a five-point scale.
The study used dried, milled Maitake rather than a water extract; methanol was used for analytical extraction, not as the food ingredient.

The research reports overall acceptance scores of 4.3/5 for 5% Maitake, 4.5/5 for the control and 2.7/5 for 20% Maitake.
The 20% loaf fell below the 3/5 acceptance threshold.
Protein and laboratory antioxidant activity increased, while higher additions reduced loaf volume.
Lower inclusion was numerically closer to the control; this is not a claim of statistical equivalence.

Formulation considerations

From research to product development

  • Ingredient comparison: Compare the supplied 1:1 grade and particle profile with the dried, milled Maitake used in the study.
The published percentages refer to the flour blend, not the finished loaf or serving.
Water-extract test results must not be transferred to this fruiting-body grade.
  • Mixing and baking: MUSHEEZ® recommends blending the Maitake and calcium powders thoroughly with the dry ingredients during the five-minute blend.
Add alternative nutrients with the flour or other dry ingredients.
Adjust water and assess dough handling, flavour, crumb structure, chalkiness, loaf volume and texture in the intended flour blend.
Run sensory trials before choosing an inclusion level.
  • Mineral behaviour: Calcium is stable through the 230°C bake.
At less than 1% of dough weight, little effect on yeast is expected from the calcium.
The standard algae calcium grade neutralises acid, so recipes using chemical leavening or sourdough may need adjusting.
Magnesium is alkaline; assess yeast activity, crumb colour and taste.
  • Liquid route: Incorporate SOLVIQA™ Maitake liquid into the dough’s liquid ingredients and reduce the other recipe water to maintain the intended hydration.
Powder and liquid doses are not interchangeable.
Assess loaf structure for this separate development option.
  • Gluten-free suitability and shelf life: Validate gluten-free sourcing, cross-contact controls, finished-product testing and applicable labelling.
Confirm the mushroom ingredient, selected nutrient grade and finished formulation meet the gluten-free specification.
Assess processing, microbial stability, packaging and shelf life.
  • Finished nutrient content: Use MUSHEEZ®-recommended overages and measure nutrient retention in the baked product to confirm them.
Set the calcium addition to meet the intended finished-product claim; count calcium from the base recipe only where its contribution is established.
Confirm calcium content in the baked product and qualifying nutrient levels after processing and preparation and throughout shelf life.
