What the research tells us

Researchers compared Maitake water and methanol extracts in laboratory tests.
The water extract showed stronger antioxidant activity and was selected for beverage development.
The beverage extract was made from dried Maitake fruiting bodies using water extraction at 40°C for 2 hours, repeated three times, followed by filtration and freeze-drying.
Methanol was used in the separate laboratory comparison, not the beverage formulation.
They then tested a drink containing Maitake water extract, apple, green tea and other ingredients to identify the most acceptable formulation.

The preferred study formulation used 0.5% Maitake water extract, 2% apple extract, 2% green tea extract and 8% oligosaccharide.
It also contained 2% jujube extract, 1% Solomon’s seal extract and 0.01% vitamin C.
The finished study beverage measured 9.8 Brix.
The selenium pairing and finished shelf life were not tested in that research.

Formulation considerations

From research to product development

  • Ingredient comparison: Compare the selected SOLVIQA™ Maitake water extract with the freeze-dried water extract used in the study, including solids and extraction process.
Powder and liquid doses are not interchangeable.
Assess the regulatory suitability of the other botanical ingredients before using them in a commercial formulation.
  • Addition and processing: MUSHEEZ® recommends confirming the selenium addition point and any overage during formulation trials.
Selenium, iodine and chromium are suitable for all drink processes, but processing tolerance does not establish a finished-product shelf life.
Add vitamin alternatives late in the process.
Vitamin A is listed for chilled, HPP and pasteurised drinks; vitamins E and K2 and biotin also tolerate UHT.
  • Dispersion and sensory checks: Assess reconstitution, dispersion, sediment, Maitake flavour, colour, pH, processing and microbial stability in the intended apple and green tea base.
Vitamins A, E and K2 disperse best in drinks containing fat; clear drinks may need shaking before drinking.
Guava-leaf zinc may haze clear drinks.
  • Packaging and nutrient verification: Use an opaque oxygen-barrier pack.
Use MUSHEEZ®-recommended overages and confirm them by testing the finished drink through its intended shelf life.
Verify retained selenium after processing and preparation and throughout shelf life, including the separate high-content threshold for the HIGH IN SELENIUM target.
Verify the corresponding qualifying nutrient level if an alternative is selected.
